Time - be it hours, months or years - is one of the determining factors for the quality of a Trento DOC. Our “Oro Rosso” - the company's historic label - comes from Chardonnay vineyards between 600 and 750 meters above sea level and the grapes are taken as quickly as possible to the Marmonier press, which allows for extremely delicate and slow pressing (3-4 hours for 30 quintals of grapes) to obtain a top-quality must. This is followed by natural cold decantation, fermentation and aging for 6 months in stainless steel tanks. The tirage takes place in the spring following the harvest and from then on “Oro Rosso” ages in the bottle for at least 48 months before disgorging. Together, we will taste bottles that rest in stacks and experience together the journey that the Trentodoc “OROROSSO” from Cembra Cantina di Montagna travels during its 48 months of aging.
